ALTERNATIVE BREAKFAST IDEAS
Traditional American Breakfast Menus are big on fat, cholesterol, refined wheat and sugar and dairy. Here are some alternative breakfast menu ideas:
Breakfast Stir-Fry
2 T. Olive oil 1/2 Sweet onion, diced 1 Clove garlic, chopped ½ Pound ground turkey (optional) 1 Cup mushrooms diced 1 Cup sugar snap peas, coarsely chopped 1 Cup cherry tomatoes, coarsely chopped 2 Cups spinach leaves 1 Cup cooked brown rice
Wash all vegetables except the mushrooms. Wipe the mushrooms clean with a damp paper towel. Dice and chop all vegetables as directed. Heat the oil in a large skillet. Add the turkey (optionally) and sauté for 2 minutes. Add the onion, garlic and mushrooms. Sauté until the mushrooms and onions give up their water and the turkey is cooked. Add the sugar snap peas. Cook 2 minutes. Add the cherry tomatoes and spinach. When the spinach has wilted, serve over warm brown rice.
Serves 4
Eggs and Rice
2 Cups cooked brown rice 2 Eggs 4 Handfuls of clean spinach Olive oil 2 Garlic cloves, sliced thinly 2 T. diced onion or shallot Salt and pepper
Warm the rice and, if desired, toss with a little butter. Sauté the garlic and onions in the olive oil until the garlic is caramelized. Remove the garlic from the pan. Add the spinach to the same pan and cook until lightly wilted.
Poach eggs or cook eggs over easy.
Put one cup warm brown rice on each plate. Top with spinach and then with egg. Garnish with caramelized garlic slivers and season to taste.
